How to make ALBONDIGAS / MEATBALL SOUP

ALBONDIGAS are so good anytime, this dish can be served with corn or flour tortillas.

Instructions

Things You'll Need:

  • 1 onion minced
  • 4 garlic gloves minced
  • 1 medium to large minced tomato
  • 2 bay leaf (whole)
  • 2 leaves of minced Yerba buena/ mint leaf
  • 1 teaspoon of cumin
  • 1/2 cup of long grain rice
  • 2 potatoes cut into 6 pieces
  • 1 large yellow zucchini cut into 8 pieces
  • 1 large green zucchini cut into 8 pieces
  • 2 whole corns each corn cut into four pieces
  • 4 tablespoons powder chicken knorr or chicken bullion
  1. Step 1

    In a large bowl add the
    pork meat
    hamburger meat
    garlic
    onion
    rice
    cumin
    tomato
    eggs
    chicken knorr Mix well so that the salt distributes well

  2. Step 2

    Make meatballs with this well blended mixture

  3. Step 3

    In a large 8 quart pan bring 6 quarts of water to a rapid boil add sea salt to taste better yet add about six cubes of chicken bullion and add the bay leafs.

  4. Step 4

    add the meatballs to the boiling water, let the meatballs boil in the boiling water for 30 minutes keep covered CAUTION make sure it is a steady boil but not make sure it does not boil over. Make sure that this is well flavored with the chicken knorr and a about 1 teaspoon of cumin

  5. Step 5

    after the 30 minutes add the corn and let it boil again then when it comes back to a boil let it boil covered for additional 5 minutes at this point add the potatoes and let it boil for 10 additional min at this point at the zucchinis

Tips & Warnings
  • you can serve this with a small bowl of Mexican rice on the side to be used to add to the Albondigas soup.
  • be careful that the potatoes don't over cook.
