Beef joint can be cooked in many different ways. Some prefer to cook beef joint in a slow cooker or in a crock pot, but it also can be made on the grill or in the oven. The recipe below is for Honey Mustard Beef Joint. This dish can be prepared on the grill for a great summer dinner.
Things You'll Need
- 1 tbs Mustard Seed 1 tbs Dijon Mustard 2 tbs Thin Honey 3- 4 lb Beef Joint (aka Rib of Beef w/ bone) Sea Salt Black Pepper
How to Cook Beef Joint
Place beef joint in a grill pan and put it on the grill over medium heat without any seasoning for 20 minutes. While the beef joint is pre-cooking, mix the mustard seeds, dijon mustard and honey in a small mixing bowl. This is the mixture that will be used to coat the outside of the beef joint while it cooks on the grill.
Remove the beef joint when the 20 minutes are up but leave the grill on. Use a basting brush to brush the mustard and honey mixture over the outside of the beef joint. You should use about half of the mustard and honey mixture on the beef joint. Place the beef joint back on the grill uncovered. Roast the beef joint for 30 minutes.
Baste the beef joint with the juices in the pan before removing from the heat of the grill. After basting the beef joint with the juices, take the pan from the heat and cover the meat with the remaining honey and mustard mixture. Baste the beef joint again with the juices in the pan before returning the meat back to the grill.
Cook the beef joint on the grill for another 15-30 minutes depending on how rare you like it. Less time should be used for rare beef joint. When beef joint is cooked to your liking, remove from the grill. Shut off the grill. Remove the beef joint from the grilling pan and place on a warming platter. Cover the beef joint with foil and a clean cloth. Let sit for 15 minutes.
Use the beef drippings in the grilling pan to make a gravy. This can be done by putting the drippings in a pot over medium low heat with a little bit of flour. Whisk flour into the drippings to thicken. Gravy will be thin. Carve beef joint and serve with roasted potatoes, corn on the cob or rice and green beans. Serve gravy on the side for dipping or for drizzling over the beef joint slices. Season to taste with sea salt and black pepper.
Tips & Warnings
- For rare beef joint the total cooking time should equal out to approximately 45 minutes, for medium one hour and for well done approximately one hour and fifteen minutes.
- Shut off the grill when you are done using it!
