How to Make Cannoli Tubes

The cannoli is a Sicilian dessert made with tube-shaped pastry dough that's fried and then filled with a sweet filling, usually ricotta cheese or mascarpone. There are endless variations that can be made on the traditional recipe. Chocolate chips or fruit can be added to the filling and the tubes can be dipped in chocolate.

Things You'll Need:

  • 4 cups of sifted all-purpose flour 2 tbsp. sugar 1/4 tsp. salt 3 tbsp. softened butter 2 egg yolks 3/4 cup of white wine Shortening for frying Metal cannoli tubes
  1. Step 1

    Mix the dry ingredients in a mixing bowl.

  2. Step 2

    Add the butter and work it into the dough. Add the egg yolks and beat together. Add the wine, 1 tablespoon at a time. Don't overmix--just bring the dough together.

  3. Step 3

    Form the dough into a ball and let sit for about half an hour.

  4. Step 4

    Roll the dough out until it's almost paper-thin. Make sure your surface is well floured. Use a glass or cookie cutter to cut circles about 3 to 4 inches in diameter.

  5. Step 5

    Roll each circle of dough onto a metal cannoli tube. Overlap the edges to seal and turn the edges out slightly. Fry them, just a few at a time, in the melted shortening until browned on all sides.

  6. Step 6

    Remove from the grease and set on paper towels to cool. Wait one or two minutes before removing the metal tube. Leave the cannolis on the paper towel after removing the metal tube until they are completely cooled.

Tips & Warnings
  • If you make the tubes ahead of time, store them in airtight containers.
