How to Bake Macadamia Orange Cream Cookies

Cookies are great gift basket item. If you like orange flavored cookies, try these Macadamia cookies covered in white chocolate and a strip of orange rind.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • (Cookie Dough)
  • 4 ounces unsalted butter, softened
  • 2 tablespoon sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup flour
  • 1 cup Macadamia nuts, chopped
  • (Cookie Rind)
  • 2 small oranges
  • 1 cup sugar
  • 4 ounce white chocolate, melted
  1. Step 1

    Beat butter, sugar, vanilla extract until fluffy and light. Add the Macadamia nuts and flour. Mix well and chill the dough in the freezer, about 12 minutes.

  2. Step 2

    Preheat oven to 350 degrees F. Prepare a parchment covered baking tray.

  3. Step 3

    Roll pieces of dough into 3/4" diameter balls. Slightly flatten them and arrange on prepared baking tray, keep each 2" apart.

  4. Step 4

    Bake cookies until light brown, about 14 minutes and remove to a wire rack. Cool to room temperature.

  5. Step 5

    Make candied orange rind while the cookies are cooling. Heat saucepan with 4 cups water over high. Bring water to a boil.

  6. Step 6

    Meanwhile, cut the oranges in half and scoop out the pulp. Slice the rinds into 1/8" to 1/4" thick strips. Place rind strips in the
    saucepan. Boil 20 minutes and drain.

  7. Step 7

    Rinse the strips in a colander and return to the pan with 2 cups water and 1 cup sugar. Simmer over low heat for another 20 minutes.

  8. Step 8

    Use strainer and keep the strips from the syrup. Let strips cool. Set aside.

  9. Step 9

    Prepare a new parchment lined baking sheet. Dip the bottom cooled cookies (about 1/4" up the sides) into the melted white chocolate. Drip off any excess chocolate.

  10. Step 10

    Put chocolate dipped cookies onto prepared baking sheet, and press an
    orange rind strip around individual cookies. Stick the strip to the cookie where the chocolate coats the sides.

  11. Step 11

    Place cookies at least 1 hour in the refrigerator and serve cold. Keep unused portion in the fridge; consume within a few days.
