Things You'll Need:
- 15 skewers
- 3 lemons or lemon juice
- 2 Tbsp. olive oil
- 4 Tbsp fresh dill
- 2/14 lbs. peeled and cleaned large shrimp
- 2 lbs scallops
- vegetables of choice
- black pepper
- salt
-
Step 1
Heat the grill before you grill the scallops and shrimp and while seasoning and preparing the fish. Set the temperature to medium heat. Make sure you wash the shrimp and remove the black veins. Rinse and wash the scallops and allow them to dry off on a paper towel.
-
Step 2
Combine the lemon juice with the olive oil and garlic in a mixing bowl. Stir lightly with a wooden mixing spoon to make sure you combine salt and pepper and the remainder of the seasonings. Add 2Tbs dill, 1/2 tsp of salt, 1/3 teaspoon black pepper and stir again until they are all well blended. Add the shrimp and scallops and using your hands or a spoon, and gently coat and season them with the mixture.
-
Step 3
Thread the scallops and shrimp alternating them on a skewer. Place on the heated grill until they are opaque. Enjoy outdoor grilled scallops and shrimp and rotate the skewers to make sure the shrimp and scallops are cooked on each side. Do not allow to overcook as they will become rubbery and good only for the garbage disposal.
-
Step 4
Slice an Italian Bread in quarters and spread butter and garlic on top. Place on the barbecue grill to toast for a few minutes. Place on a plate on the table. Serve with a side salad of coleslaw or a tossed salad with lettuce, tomatoes, onions and cucumbers or any other veggie, for a delicious summertime outdoor grilled scallops and shrimp meal for family or friends.

on 7/20/2009 I am seriously thinking about going vegetarian but there's only one real problem. I would miss seafood far too much. Gotta Love Grilled Shrimp! 5*
