Noodle Bowls can be vegetarian or carniverous

Oriental/Asian, Chinese and Vietnamese, cultures LOVE noodle bowls - and so do I! College students LOVE Ramen Noodles, and so do I! Here's a healthy way to merge the two ideas ... minus the MSG and JUNK that are common. It takes the same amount of time as creating typical Ramen Noodles, but is healthier and tastier!

Difficulty: Easy
Instructions

Things You'll Need:

  • Package of Ramen Noodles
  • Can of MSG-Free Chicken Broth
  • Scallion
  • Mushrooms - Shitake or Portabello
  • Ground Ginger
  • Soy Sauce
  • Extra Firm Tofu (optional)
  • Chicken, Beef or Shrimp (optional)
  1. Step 1
Makes sure to use a small pan so liquid covers the noodles.

Add one package of Ramen Noodles (JUST the noodles – throw away the seasonings) and one can of MSG – Free Chicken Broth to a small pan on stove. Bring pan to a simmer on Medium heat.

  2. Step 2
Keep cutting boards clean. This is 12 years of staining!

In the meantime, chop preferred mushrooms (Portabello or Shitake offer the most flavor), scallions, and Extra Firm Tofu and add to the pan.

  3. Step 3
I prefer ground ginger. Fresh ginger can be used too.

Also, add to the pan a tablespoon or two of soy sauce (flavor to your taste), and a dash of ground ginger. You can use fresh chopped ginger, but it is MUCH more potent in flavor so use sparingly.

Allow soup to simmer 3 – 5 minutes with all the ingredients added. While soup is finishing up, add to the bottom of your bowl whatever extras you may like. Bean sprouts are a good finishing touch. If you eat meat, shredded cooked chicken, shredded beef – whatever cut you prefer, or some chopped shrimp are all good options. Use about ¼ cup of meat per package of noodles.

Finally, pour soup into your bowl and enjoy! I prefer to top mine off with seaweed used in Sushi called Nori. But, this is just a preference. Make sure that you enjoy with chop sticks for the full effect!
