Rum Cake has been an “Italian” tradition for over 150 years. Rum Cake can be served at Birthday parties, corporate events, or for a simple dessert at home. Rum cakes tend to be expensive if you purchase one at a bakery. However, I have a super easy and quick summer Rum Cake recipe that you will absolutely love.

Step 2
You will need, 1 box of white cake mix, 1 package of chocolate pudding mix, 1 package of vanilla pudding mix, 1 pint of heavy whipping cream, 1 cup sugar, 1 small bottle of Puerto Rican Rum and 1 bag of crushed almonds or walnuts. You are substituting the chocolate and vanilla custard filling with pudding mix. You can use chocolate and vanilla custard for the filling inside the cake however; preparing the custard only adds more work to the process.

Prepare cake in mixing bowl pour contents in three round baking pans (you want to make three layers). After baking remove from oven and allow to completely cool for about 1 hour. Next, follow directions on back of pudding boxes. Set aside both vanilla and chocolate puddings in refrigerator for about an hour. In separate mixing bowl pour heavy cream and sugar and beat for about 10 minutes. Place cream in refrigerator for about an hour to chill.

Step 4
Take layer one and spread vanilla pudding in generous amounts, add another layer and add generous amounts of chocolate pudding, and place third layer on top. Next, pour the entire bottle of rum over entire cake.

Step 5
Finally, begin icing the cake with the whipping cream that you prepared. Add nuts as a final garnish on top and on the sides. Enjoy!!
