Eating well and preparing it quickly does not have to deplete the pocket of money. Here is an easy healthy fajitas meal that will feed a family of four on less that three dollars per serving.

Instructions
  1. Step 1

    On your next trip to the store pick up 1 onion, 1 red and 1 green pepper, 1 lb boneless skinless chicken breasts, 1 15 oz can of black beans, package of honey-wheat flour tortillas, reduced-fat shredded cheddar cheese and salsa.

    From the pantry you will need olive oil, chili powder, garlic powder, and salt. If you are missing any of these ingredients just add them to your shopping list. These are some good things to always have on hand.

    Measure out 2 tbsp of olive oil, 1/4 tsp of chili powder, 1/4 tsp of garlic powder and 1/4 tsp of salt.

    Dice your onion. Cut the peppers, red and green, into thin strips. Measure out the cheese, about 1 cup and salsa about 1 cup.

    Heat 1 tbsp of olive oil in a large saute pan over medium heat. Add onions,and peppers to saute until they are soft. This should take about five minutes. Remove and set aside.

    Add the chicken into the saute pan and season with the chili powder, salt, garlic powder5 and cook for about seven minutes. While it is cooking warm up the tortillas between two damp paper towels in the microwave.

    Call everyone to dinner. It is a fix your own fajitas healthy meal for a little under $3.00 a person.
