Here is a tasty recipe that offers a new take on a favorite comfort food: chicken fried steak. I do give you the option of using gravy with this healthier recipe--but my suggestion is to skip the gravy--and serve instead over a bright green arugula, tomato and red onion salad with balsamic dressing to mimic veal milanese. Either way--you'll enjoy it--especially knowing it's healthier than your classic CFS.

Instructions

Things You'll Need:

  • 10 oz. medium size "minute" or skirt steak
  • Salt
  • Pepper
  • 1 cup whole wheat flour
  • 4 egg whites, beaten
  • 2 tbsp. canola oil
  • 1 cup lowfat or soy milk
  • 1/2 tsp. Tabasco
  • 1 cup Worcestershire sauce in small shallow container for quick marinade
  • 1/4 cup chicken broth
  1. Step 1

    Pound the steak thin and generously salt and pepper. Let sit in Worcestershire for about 3 minutes.

  2. Step 2

    Pat dry and dip in mixture of egg and milk, then roll in flour that has been generously salted and peppered. Heat large nonstick pan over medium heat and add steak for a couple of minutes on each side until golden brown.

  3. Step 3

    For gravy, add 1/4 cup chicken stock to the pan with browned bits. Add flour to the pan and brown. When flour is brown, slowly add 2 tbsp. milk and salt and pepper, then sprinkle Tabasco at the end and pour on top of steak.

  4. Step 4

    Keep over low heat to reduce until desired thickness. If necessary, drain undesired bits.
