The most common snap peas used in the kitchen are sugar snap and snow peas (sometimes called Chinese peas). These peas differ from other varieties in that the pods are edible as well as the peas inside. Snow peas are picked and frozen when the peas inside are still small and barely visible, and sugar snaps are considered ready to eat when the peas are large and the pods are round and full. Instructions

      Bring a large pot of water to a boil. Blanch the raw snap peas in the water for 2 to 3 minutes.

      Dump the peas immediately into a colander in the sink. Run cold water over them to cool them quickly and stop the cooking process.

      Allow the excess water to drain from the peas. Dump them onto clean paper towels and pat dry. That will remove excess moisture that can lead to freezer burn.

      Place the snap peas into a freezer bag leaving 1/2 inch space at the top and seal, pressing out as much excess air as possible. Label with the variety and the date before placing in your freezer.

Tips & Warnings

  • Seal the bag nearly closed and insert a drinking straw. Suck out the excess air then quickly remove the straw and seal. That will help prevent freezer burn.
