How to Bake Vanilla Blueberry Muffins

Aromatic vanilla blueberry muffins made with pure vanilla extract and real blueberries.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2-1/2 cups all-purpose flour
  • 3/4 cup granulated white sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • Zest of one orange
  • 1 large egg, lightly beaten
  • 3/4 cup buttermilk
  • 2/3 cup safflower or canola oil
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen blue berries
  • 12 waxed baking cups
  1. Step 1

    Whisk together the egg, safflower or canola oil, buttermilk, oil, and vanilla extract in a bowl.

  2. Step 2

    In a separate owl combine the sugar, baking powder, baking soda, flour, orange zest, and salt. Gently fold the blueberries in the mixture.

  3. Step 3

    Fold the ingredients in Step 2 into that in Step 1. Stir with a rubber spatula until the ingredients are combined, but do not over mix the batter or your muffins will be tough after baking.

  4. Step 4

    Position rack in middle of oven. Preheat oven to 375 degrees F.

  5. Step 5

    Spray with cooking oil or butter a 12" x 2-3/4" x 1-1/2" muffin tray. Put waxed baking cups into twelve tray cups.

  6. Step 6

    Fill 12 cups with two spoonfuls of batter or 2/3 full for each cup, then place in the oven.

  7. Step 7

    Bake until a toothpick inserted in muffin center comes out clean, or until golden brown; about 18 minutes.

    Remove muffins and cool on a wire rack for about 10 minutes before removing from baking tray. Dust with powdered sugar, if desired.

    Yields 12 vanilla blueberry muffins.
