Things You'll Need:
- 2-1/2 cups all-purpose flour
- 3/4 cup granulated white sugar
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- Zest of one orange
- 1 large egg, lightly beaten
- 3/4 cup buttermilk
- 2/3 cup safflower or canola oil
- 1 teaspoon vanilla extract
- 2 cups fresh or frozen blue berries
- 12 waxed baking cups

Step 1
Flour mixtureWhisk together the egg, safflower or canola oil, buttermilk, oil, and vanilla extract in a bowl.

In a separate owl combine the sugar, baking powder, baking soda, flour, orange zest, and salt. Gently fold the blueberries in the mixture.

Fold the ingredients in Step 2 into that in Step 1. Stir with a rubber spatula until the ingredients are combined, but do not over mix the batter or your muffins will be tough after baking.

Position rack in middle of oven. Preheat oven to 375 degrees F.

Spray with cooking oil or butter a 12" x 2-3/4" x 1-1/2" muffin tray. Put waxed baking cups into twelve tray cups.

Fill 12 cups with two spoonfuls of batter or 2/3 full for each cup, then place in the oven.

Bake until a toothpick inserted in muffin center comes out clean, or until golden brown; about 18 minutes.

Vanilla blueberry muffinsRemove muffins and cool on a wire rack for about 10 minutes before removing from baking tray. Dust with powdered sugar, if desired.
Yields 12 vanilla blueberry muffins.
