How to Roast Raw Cashews
Cashews are a type of nut popular for snacking or adding to savory or sweet dishes. Novice cooks may purchase a large quantity or raw cashews to use and wonder why they taste so much blander than the processed nuts they've consumed in the past. In their raw form, cashews have little flavor. To open up the taste, raw cashews need to be roasted to release their oils. Preheat oven to 350 degrees Fahrenheit. Arrange cashews in an even layer on a baking sheet.

Place baking sheet into oven for approximately five minutes. Remove cashews from oven and stir gently to prevent burning.

Continue roasting cashews for another five minutes, remove and stir again. Return cashews to oven for another five to 10 minutes.

Remove cashews from oven once they are slightly golden brown, approximately 15 to 20 minutes total roasting time. Let cool slightly until cashews are warm but can still be handled.

Use a pastry brush to coat cashews lightly with oil while the nuts are still warm. Sprinkle with preferred amount of salt and allow to cool.

Tips & Warnings
Use nonfat cooking spray instead of oil on cashews to cut down on calories while still giving salt an adhesive to stick to.
Do not leave cashews unattended in oven because they can burn quickly.
