How to Cook Microwaved Garlic Rainbow Trout
Rainbow trout is native to North America, and they are found wild in rivers or lakes wherever clean water is available. These days, most rainbow trout available at markets in the Untied States is farm-raised. Depending on what the trout has been fed, the flesh color varies from red to white, and is delicate, sweet and mild in taste.
You can prepare rainbow trout, paired with garlic, in the microwave for a fast and tasty preparation.

Things You'll Need
- 2 lbs. fresh rainbow trout fish fillets
- 1 cup low-fat milk
- 6 cloves garlic, minced
- 1/2 tsp. paprika
- 1/4 tsp. garlic salt seasoning
- 1/4 tsp. sugar
- 1/4 tsp. nutmeg
- 2 tsp. butter
- 1 tbsp. flour

Rinse trout fillets under cold water, then pat dry with paper towels. Set aside.

Combine the minced garlic, milk, paprika, nutmeg, garlic salt seasoning and sugar in a large, microwave-safe dish. Cover and heat contents on high power until the milk is very hot -- about 2 to 3 minutes.

Add the rainbow trout fillets, with thick parts toward the outside and thin parts toward the center, to the milk mixture. Spoon some milk mixture over the fish.

Cover and cook on high power for 3 to 4 minutes. Turn the trout fillets so the bottom sides are now facing up. Cook for another 3 to 4 minutes and then keep the fillets in microwave oven for 1 minute.

Transfer the trout fillets to plates and keep warm. Reserve the fish liquid in the microwave dish to make sauce.

Combine the flour and butter to form a soft lump. Stir this into the reserved fish liquid, blending until the butter melts. Heat on high for 1 to 2 minutes, or until the liquid boils. Remove and drizzle the sauce over the fish using a big spoon.
Serve garlic rainbow trout with cooked rice, pasta or a side of green salad. Makes 4 servings.
