Things You'll Need:
- 1 1/4 cup flour
- 3 tsp baking soda
- 1/4 cocoa powder
- 8 tbsp oil
- 1 cup sugar
- 1 1/4 cup water (or 1/2 soymilk and 3/4 water)
- 1 medium banana mashed

Step 1
Preheat your oven to 375 degrees F. Next, mix all dry ingredients (sugar, flour, cocoa powder, baking soda) in a large bowl. Make sure there are no large clumps. White sugar and white flour work fine, but if you want to make a healthier choice, use raw sugar and whole wheat flour, or a combination of both.

Next, combine all wet ingredients (banana, soymilk/water, oil) in a small bowl. Then stir we ingredients into dry ingredients, making sure they are thoroughly mixed. Don't leave any pockets of dry stuff!

Now you will need your cake pans--either two 8" pans or one 9" x 13" pan. Oil the pan(s) and they distribute batter equally. Pop them in the oven, as close to the middle as possible. They will need to cook 30-40 minutes, depending on how hot your oven is. A knife inserted in the center of the cake should come out clean when the cake is done. Now let cool for 15 minutes, frost (see my recipe for yummy vegan frosting) or layer with peices of banana, and enjoy!
