No More Cracks!!!
No More Cracks!!!

Cheesecakes are great to serve for company. Whether you are planning to serve a savory cheesecake with crackers for an appetizer or a sweet cheesecake for dessert you don't want to spend all the time it takes to prepare and bake the perfect cheesecake and have a crack appear in it. There is never enough time or ingredients to bake a second one so be sure to follow these steps for a crack free cheesecake that are perfect for any cheesecake recipe.

Difficulty: Easy
Instructions
  1. Step 1

Crack Free Cheesecake Step Number One: Be sure to Beat the filling Gently after adding the eggs and stir in the remaining ingredients by hand. Beating the filling to briskly will add air to the mix and the air may cause the cheesecake to puff up, then fall and crack.

This is the number one cause of cheesecake cracks for me, so I know from experience that rushing doesn't pay especially in a 7 layer savory cheesecake. I have even started letting each layer set completely before adding the second layer.

  2. Step 2

Crack Free Cheesecake Step Number Two: Check if your cheesecake is Done by Gently Shaking the cheesecake Pan rather than sticking a knife in the cheesecake. If a knife is inserted in the cheesecake a you could be causing the crack that will only grow as the cheesecake cools.

Cheesecakes are different that a traditional cake, when they cool a hole typically does not fill it grows.

  3. Step 3

Crack Free Cheesecake Step Number Three: Follow the cooling directions for your cheesecake recipe exactly. You may even want to set a timer for the time alloted before loosening the crust so that you are not tempted to rush the process. If you don't loosen the crust when the recipe specifies, the cheesecake may begin to pull away from the sides and cause a crack.

For a beautiful crack free cheesecake good enough for company you will need to follow each of these steps and be patient.

Tips & Warnings
  • If all else fails with a savory cheesecake you can frost with sour cream and chives or a sweet cheesecake fruit or chocolate will cover a crack. A crack in a cheesecake does not effect flavor...
