How to Make Stuffed Potatoes With Yogurt

If you like baked potatoes but want to skip on the sour cream you can make it with yogurt to make it tasty yet lighter. The following recipe will make four servings, since you will half the potatoes.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 2 potatoes
  • 1 cup of yogurt (plain)
  • Jack or Swiss cheese
  • Diced bacon
  • 1 sliced scallion
  • A bowl
  1. Step 1

    You can either choose to microwave the potatoes for five minutes on high or you can oven-bake them for twenty minutes or until thoroughly cooked.

  2. Step 2

    At this point you cut the potatoes in half vertically and take out the flesh and put it aside as you will need it later.

  3. Step 3

    In a bowl mix the plain yogurt, the Jack or Swiss cheese, the diced bacon and the sliced scallion and add the potato flesh and put the entire mix into.

  4. Step 4

    The last step is to broil the potatoes for about a minute or when you see it slightly brown, and then add the mixture to the potatoes and enjoy your potatoes with yogurt.
