Perfect for picnics, parties or an everyday supper, potato salad is a longstanding favorite side dish. Using just a handful of ingredients, prepare a version that will have guests asking for seconds.   • 6 medium potatoes, peeled
  • 4 hard-boiled eggs
  • 1/2 cup mayonnaise
  • 1/2 cup pickle relish
  • 1 tbsp. Dijon mustard
  • Salt and pepper

Instructions

      Place the potatoes in a pot of boiling water until they are covered. Boil until the potatoes are tender, approximately 20 minutes. Poke the potatoes with a fork to check for tenderness.

      Drain and allow the potatoes to cool for 30 minutes.

      Dice the potatoes, and peel and chop the hard-boiled eggs.

      In a medium-size bowl, mix together the mayonnaise, mustard and relish. Stir in the eggs and potatoes, and season with salt and pepper to taste. Chill the salad for three hours before serving.

Tips & Warnings

  • For added flavor, substitute ranch dressing for half of the mayonnaise. Leave the skins on the potatoes for extra fiber. Garnish the salad with parsley or paprika.
