Make Greek Stuffed Tomatoes Yemista

This recipe for stuffed Greek vegetables, or yemista, is a delicious authentic Greek dish that is vegetarian and made with heart healthy extra virgin olive oil. Try it with tomatoes and green peppers. This recipe serves 2-3

Instructions

Things You'll Need:

  • 2 beefsteak tomatoes
  • 2 large green peppers
  • 1/2 white onion
  • fresh dill and parsley
  • 1/2 cup olive oil plus a few tablespoons
  • 1/4 cup dry white wine
  • salt and pepper
  • uncooked white rice
  • 2 cloves garlic
  1. Step 1

    Carefully remove tops from vegetables and set aside. Remove inside of tomatoes and place the pulp in a bowl. Remove the inside of the pepper. Preheat over to 350. Be careful to leave the outside of the vegetables intact so they can hold the filling.

  2. Step 2

    Dice the onion and garlic. Sauté in a few tablespoons of olive oil over medium heat. Add 1 cup of uncooked rice and 1 cup of water. Stir and simmer until water is absorbed. Add 1/4 cup of white wine and simmer until absorbed.

  3. Step 3

    Chop the pulp of the tomatoes. Add the rice and onion mixture once liquid is absorbed, add 1/2 cup olive oil, and a few generous handfuls of the fresh chopped herbs. Add salt to the rice and to the inside of the vegetables.

  4. Step 4

    Spray a baking dish with cooking spray and place the peppers and tomatoes in the dish. Fill them with the rice mixture leaving room to allow the rice to expand. Place the tops back on the vegetables to cover. Brush with olive oil. Bake for 1.5 hours. Brush outside of vegetables with oil halfway through. Enjoy!

Tips & Warnings
  • Add some crumbled feta cheese when serving.
