Baked goods made with brown sugar are rich and delicious. Unfortunately, brown sugar tends to harden and become difficult to work with when it is stored over an extended period of time. It is possible to restore the moisture in brown sugar so that it can be used for baking, however. Three ways of moistening brown sugar are heating it in an oven, heating it in a microwave and letting it absorb moisture from a wet paper towel.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Brown sugar Oven-safe dish Oven Microwave-safe dish White paper towels Microwave Plastic container with lid Aluminum foil or plastic wrap

    Using an Oven

  1. Step 1

Remove the brown sugar from its packaging, and place it in an oven-safe dish.

  2. Step 2

Heat the dish in an oven preheated to 250 degrees.

  3. Step 3

Watch the sugar as it warms. After five minutes, remove the pan and check to see whether it is soft. Return it to the oven for several more minutes if it is not soft yet. Use the brown sugar immediately because it will harden again as it cools.

  4. Step 4

Re-soften the brown sugar as often as necessary by repeating steps 1 through 3.

  5. Using a Microwave

  6. Step 1

Transfer the brown sugar from its packaging to a microwave-safe dish.

  7. Step 2

Dampen a white paper towel with water, and place it over the brown sugar in the dish.

  8. Step 3

Microwave the brown sugar on high for 30 seconds. If it is soft, use it immediately. If it is still hard, microwave it for intervals of 30 seconds until it is soft.

  9. Step 4

Re-soften the brown sugar as often as necessary by repeating steps 1 through 3.

  10. Allowing Sugar to Absorb Moisture

  11. Step 1

Place the brown sugar in a plastic container, and cover the top of the brown sugar with a piece of aluminum foil or plastic wrap.

  12. Step 2

Place a moistened paper towel on top of the aluminum foil or plastic wrap.

  13. Step 3

Seal the container. After approximately two days, the sugar should have softened from absorbing the moisture from the paper towel. Keep the moistened brown sugar tightly sealed in the container to keep it soft.

Tips & Warnings
  • Brown sugar has an indefinite shelf life, but use it within six months for the best flavor.
  • Be very careful when handling brown sugar warmed in the oven or microwave because it gets extremely hot. Use white paper towels because wet ink from paper towels containing other colors can transfer to food surfaces.
