There are many variants to preparing yeast bread, such as adding cranberries to it. You don't have to wait until the holidays for the tart taste of cranberries. When you combine this berry with yeast dough, a freshly baked loaf of delicious bread is the result. It's neither hard nor time consuming to make this loaf of bread. Once finished baking, you can cut the cranberry yeast loaf into slices and enjoy hot and tasty bread.

Difficulty: Easy
Instructions

Things You'll Need:

  • 4 cups all-purpose flour 1 ¼ cups warm water Candy thermometer 1 pkg. dry active yeast 1 ½ cups cranberries 1/3 cup brown sugar 2 tbsp. butter 2 tbsp. vegetable oil Large bowl Loaf pan Plastic wrap
  1. Step 1

Preheat the oven to the temperature of 350 degrees F. Next, measure out 4 cups of flour into a bowl and set aside until needed.

  2. Step 2

Pour ¼ cup warm water in a bowl with the dry active yeast. Stir until the yeast dissolves and let sit for about 5 minutes to activate. Use a candy thermometer to make sure the water temperature is between 110 and 115 degrees F. A higher temperature may cause the yeast to not activate.

  3. Step 3

Place the cranberries and brown sugar in a bowl with the cup of warm water and mix with a spoon. Let them soak for 15 minutes. Next, melt the butter either in the microwave or on the stove top.

  4. Step 4

Add the dissolved yeast, oil, butter and sweetened cranberry mixture together and stir. Next, add 1 cup of flour and stir to incorporate into the other ingredients in the bowl. Add the other 3 cups of flour, stirring after addition until all the flour is gone.

  5. Step 5

Sprinkle some flour on a clean hard surface, like a counter top or cutting board. Turn your dough onto the floured surface and knead for 5 or 6 minutes. Lightly grease a large bowl and place the dough in it. Turn the dough over once to make sure that the top and bottom are coated in oil.

  6. Step 6

Cover the bowl with a lid or plastic wrap and let rise for 1 to 2 hours or until it doubles its size. Once risen, take the dough and knead it into the shape of a log. Next, lightly oil the sides and bottom of the loaf pan.

  7. Step 7

Put the bread dough in the pan, cover with plastic wrap and let double in size. Place in the oven and let cook for 45 to 50 minutes or until light golden brown. Let cool for 10 minutes before eating your cranberry yeast bread.

Tips & Warnings
  • Place the bowl in an area free of cool drafts or the dough may not rise.
