For people who like to make their meals from scratch, the homemade ripe banana fritters provide the perfect solution to those readymade pancakes, and also the boxed – up pancake mix found on the supermarket shelves.

Instructions

  • 4 soft yellow bananas, 1 ½ cups flour, ¼ cup sugar, 1/16 teaspoon salt or salt to taste, 2 tablespoon vanilla, 1/5 teaspoon nutmeg, 1/5 cinnamon, a large bowl, a frying pan or skillet, ½ cup extra vir

    Crush the bananas in a large bowl, add the sugar, vanilla, cinnamon, nutmeg, salt and stir for one minute

    Add the flour to make a creamy paste.

    Heat the frying pan – skillet on low to medium fire.

    Pour in ½ of the amount of oil and allow it to heat for 2 minutes.

    Use a large kitchen spoon to pour in 3 spoonsful of the batter, and allow it to fry for 4 minutes or until golden brown.
