Want an easy macaroni and cheese that takes less than 20 minutes and tastes gourmet? This is a great option that can easily be modified to be gluten free and is great for potlucks or a quick dinner.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 pound noodles (use rice noodles to make it gluten free)
  • 1 1/4 pounds extra sharp cheddar cheese
  • 1/4 cup milk
  • 1 teaspoon paprika
  • 1 teaspoon ground pepper
  1. Step 1

Bring a pot of water to boil then add the pasta. While the pasta is cooking, dice or shred the cheese. The smaller chunks you cut it, the easier it will be to blend later, so be sure to chop it into pieces less than 1/4 of an inch.

  2. Step 2

Remove the pasta when it is slightly under cooked and drain it. Because the pasta will continue to cook as the cheese is melting, it is important to make sure that it isn't completely done.

  3. Step 3

Add the drained pasta back into the pot and over low heat. Add the milk and 1/4 of the cheese. Stir it until it is melted. Add 1/2 of the remaining cheese and keep stirring. Finally, add the last of the cheese, pepper, and paprika and keep stirring until completely melted.

  4. Step 4

Once done, remove for the heat and serve. Enjoy!

Tips & Warnings
  • Because there are so few ingredients, the quality of your ingredients really matter. Use a high quality cheese to make it taste more gourmet and a less expensive cheese for a simple family dish
  • Add broccoli, ground beef, or grilled chicken when you are adding the cheese to change the recipe slightly
