How to roast chicken the Filipino way

Roasted chicken is one of the most favorite dish by kids during party in school. The love the taste of it. The adults love this too and it is the most common dish they can bring during potluck because it is easy to make. It will not take a long time to prepare.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Whole chicken
  • spices/ garlic, lemon grass, black pepper, oregano, soy sauce, sugar and salt
  • Teriyaki sauce will do too.
  • Stick for roasting
  • charcoal
  1. Step 1

    Clean the whole chicken. Do not chop it, leave it whole. Of course you can buy a whole chicken already cleaned in the grocery store.

  2. Step 2

    Prepare the spices. Crush the garlic about 5 cloves of depending upon how many you want. Marinade the whole chicken in the Teriyaki sauce with garlic and a little sugar & salt for about 30 minutes.

  3. Step 3

    Then put all the spices inside the whole chicken. Make a hole at the hind part of the chicken and put inside it the lemon grass, remaining garlic and Oregano.

  4. Step 4

    Coat the chicken with the marinade sauce and put it an a bowl. Prepare the stick. It should be longer enough that you can hold it when roasting the chicken. Drawn the stick in the chicken body and prepare it for roasting.

  5. Step 5

    Start a fire using the charcoal to make a hot coal good enough to roast the chicken. Or if you have a griller, this will do too. When the coal is hot enough, start to roast the chicken. Roll the chicken once in a while to make the roasting even on both sides.

  6. Step 6

    When it is already cooked, chop the chicken in bite size or you can just serve the whole chicken and let the eaters get their share. Serve with your favorite sauce.

  • This taste delicious when eaten hot and crispy
  • Good for parties and other gatherings.
