This recipe is easy to make and it really taste good. This is one of my favorite recipes. The long slender type of eggplant is best to use in this recipe.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 3-4 whole eggplant (long slender type of eggplant)
  • 1-2 eggs
  • 2-3 tbsp olive oil (or any type of vegetable oil)
  • 1 small onion
  • 1 small tomatoes(optional)
  • 1 tsp. garlic powder
  • salt to taste
  1. Step 1

    Wash the eggplant thoroughly. Do not cut it. In a sauce pan, boil 2-3 cups of water and cook the whole eggplant in a medium heat.

  2. Step 2

    While waiting for the eggplant to be cooked, beat the eggs and set aside.
    Chop the onions finely so with the tomatoes if you are using tomatoes.

  3. Step 3

    Mix the chopped onions and tomatoes in beaten eggs. Put the garlic powder in it and salt to taste then set it aside.

  4. Step 4

    When the egg is already cooked, mash it with fork. Be sure that the eggplant is still intact even if it is already mashed.

  5. Step 5

    Heat oil in a skillet in medium heat. Then, dip the mash eggplant in the egg mixture and fry it. You can use spatula to turn the eggplant while cooking. Don't keep on turning the eggplant, wait till the side is brown before turning it.

  6. Step 6

    When the eggplant turns brown and becomes crispy, put it in a plate and that is ready for serving. Serve it hot with ketchup. This recipe is good with rice or mashed potatoes.

Tips & Warnings
  • You can put a little cornstarch in the egg mixture to make it sticky.
  • Long slender type of eggplant is good in this recipe.
