Red wines are generally a heavier wine which are high in tannins. Tannins are a substance in wines that leave an almost bitter taste in your mouth. Heavier red wines do well with meats such as beef or lamb.

Sweet wines go well with spicy foods. If you are going to a Thai restaurant, you will definitely want a sweet wine.

A particularly dry wine will go well with salty food. The salty food makes the wine taste sweeter. Do not eat bitter foods with a dry wine because the wine will taste even more bitter than it is.

Light white wines go well with a lighter fish such as Sole.

The basic pairings are:
Beef- Burgundy, Barolo, Barbera
Poultry- Most white wines especially a Beaujolais
Lamb- Bordeaux, Zinfandel
Fish- Sauvignon Blanc
Bleu Cheese- Port or Sauternes
Roquefort- Port
Monterey Jack- Reisling
Gouda- Reisling or a Dry Champagne
