How to Make Quesadillas in the Microwave

This is an easy process to make yummy Mexican quesadillas in the microwave. Even kids can make these, with a little supervision!

Instructions

Things You'll Need:

  • flour tortillas, small size, not large burrito size
  • shredded Mexican style cheese or any shredded cheese
  • OPTIONAL additions:
  • salsa
  • sour cream
  • guacamole
  • jalapeno pepper slices
  • prepackaged frozen chicken fajita strips or beef fajita strips, or canned shredded chicken, drained, or ham, turkey, cooked bacon, get creative!
  • Also consider chopped spinach in the filling or black or refried beans.
  1. Step 1

    These are easy and quick to make!


    Take two or three flour tortillas per person, stack one over the other on the microwaveable plate.

  2. Step 2

    Between the tortillas, sprinkle about 1/2 cup cheese,spreading in an even, thin layer all across the flat tortilla to about a half an inch from the outer edge.
    Now is also the time to add the meat, beans, chopped spinach, or whatever you chose to have in the middle, in there as well. Spread all the filling ingredients evenly and flatly across the tortilla. Cover the cheese filling with the other tortilla, and press gently to flatten and close it up somewhat.

  3. Step 3

    If you are doing a stack of three, (a double layered quesadilla), repeat the process explained in the previous step.
    If you use only two, heat in the microwave about 45 seconds, and if you use three, heat about one minute. Plate will be very hot, carefully take it out.

  4. Step 4

    After you let it cool about a minute, take a pizza cutting wheel or a knife and cut into triangle wedges (usually six is good). Take a flat spatula or pie server and lift each wedge off the plate a bit and scoot it out closer to the outer edge of the plate, separating the quesadilla wedges apart a little bit and leaving a circular spot in the middle of the wedges for the sour cream. This makes handling and eating much easier.

  5. Step 5

    Place a scoop of sour cream and a scoop of salsa in the center of the plate for dipping, and if desired place a slice of jalapeno on each wedge.

  6. Step 6

    Quesadillas are like pizza in that the wedges are picked up by hand, and they are like chips in that you dip them into the sour cream and salsa before taking each bite, making them fun to eat for kids and a great party food!

  7. Step 7

    They make a great lunch or dinner for the family in the summer since they are fast and do not heat the kitchen up in the cooking process.
    They also work great at parties as appetizers or as an entree choice in a buffet line.
