Smoked Salmon Quesadillas with Sour Cream-Caper Sauce

A simple and tasty meal that the family will love!

Things You'll Need:

  1. Step 1

    Ingredients you will need:

    8 Wheat Flour Tortillas
    5 Ounces Boursin Cheese (or a spreadable cheese of your choice)
    1 C. shredded Monterey Jack cheese
    6 Ounces Smoked Salmon
    1/3 C. capers
    1 16 oz container of sour cream
    1 tablespoon fresh dill, finely chopped
    1 tablespoon fresh parsley
    1 avocado, sliced
    1 tomato sliced
    1 red onion, sliced
    Salt & pepper

  2. Step 2

    Preparation:

    First you want to make your Sour Cream-Caper Sauce

    Take your container of sour cream (setting 1/2 cup to the side), some chopped red onion (reserve some for your quesadillas), 1/4 c. of capers, 2 tablespoons of fresh parsley and some salt & pepper and mix together in a bowl. Cover and refrigerate.

    Fry or bake tortillas
    Fry or bake tortillas

    Take 4 of your tortillas and spread each with your Boursin cheese spread. Now top each of your four tortillas with smoked salmon (broken into pieces), capers, and jack cheese. Then, top with your remaining four tortillas.
    (you can also smash some of your avocado and put on tortilla. as well as some diced tomato)
    In a clean skillet with heated olive oil, fry both sides of the quesadillas for 2-3 minutes.
    If you would like a healthy way to do this, preheat your oven at 450 degrees. Place quesadillas on cookie sheets and heat until golden brown. Usually takes about 10-15 minutes. Tortillas will be nice and crunchy.

    Serving:

    When tortillas are ready to serve, garnish with your sour cream-caper sauce, sliced tomatoes and avocado.
    I also garnish by taking a large leaf of cabbage, cutting up some lettuce and placing inside the cabbage leaf with some tomato, green onion, and cucumber. Then drizzle the salad with balsamic dressing. Looks really impressive.

    A delicious meal that will make your tummy happy!
