If you are sick of eating chicken all of the time you may want to consider giving duck a try. It is a bit more expensive, but tastes great and goes well with almost any vegetable. One average size duck is enough to feed a family of four. One of the best ways to cook a duck is to roast it. This allows you to save the juices to make a sauce or liven up the flavor of your potatoes. Does this Spark an idea?

Instructions

      Preheat your oven to 325 degrees F. As you set the temperature, move your oven rack to the middle setting.

      Remove the giblets from the inside of the duck and then rinse the duck off under a faucet of cold water. Dry off the duck with paper towels.

      Set up your roasting pan by placing the rack inside of it. The rack lets the juices flow to the bottom of the roasting pan. Then place your duck on the rack with the breast side facing up.

      Combine your salt and pepper together in a small dish and then rub it all over the inside of the duck.

      Sprinkle the garlic and onion powders over the top of the duck's breast.

      Place the roasting pan in the oven uncovered and cook 40 minutes per pound. When the duck is finished cooking, remove it from the oven, but wait 15 minutes before carving it. This gives the juices some time to settle which will keep your meat moist instead of dried out. This will produce a medium to well cooked duck.

Tips & Warnings

  • Turn the temperature up to 425 degrees F. for 20 minutes at the end if you want your duck to have a nice brown crispy breast. Save your duck fat. It can be used to fry potatoes, add flavor to rice or pop popcorn.
