I wanted to cross two of my favorite cuisine Italian and Latin. A homemade Alfredo sauce and fire roasted chilies are the main players in this dish.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 1/4 cup butter
  • 2 clove of minced garlic
  • 2 cup of heavy cream
  • pinch of nutmeg
  • 1 cup grated Parmesan cheese
  • 1/2 cup grated Romano cheese
  • 1 Tbsp white pepper
  • 1 cup of fire roasted chilies peeled and seeded
  • 1 pound of shrimp peeled and deveined
  • 16 oz cooked fettuccine(according to manufactures directions)
  • 1/4 cup chopped cilantro
  • 1/4 cup grated parmesan
  1. Step 1

    Melt the butter in a medium saucepan over medium heat, add garlic and sauté for one minute continuing to stir to prevent from burning. Add cream and nutmeg, continue and simmer for 5 minutes

  2. Step 2

    Add Parmesan and Romano cheese to the cream mixture and whisk quickly until smooth. This should take about 2-3 minutes of constant whisking to maintain a smooth texture. If the sauce gets to thick you can add water or chicken broth to thin it out. I would add no more than a tablespoon at a time to better control the thickness of the sauce.

  3. Step 3

    Add fire roasted green chilies and white pepper and whisk into the sauce. Add shrimp to the sauce and heat through for four minutes, remove from the heat to prevent the bottom from burning. And stir periodically to prevent a skin form forming.

  4. Step 4

    Mound cooked fettuccine in bowls or on serving plates ladle sauce over and around pasta with shrimp. Finish dish with grated Parmesan cheese and chopped cilantro, serve

Tips & Warnings
  • You can cut the calories and fat in this dish by using light butter, and a combination of half and half or 2% milk with the cream. There are also low-fat choices for Parmesan and Romano cheeses.
  • When making any sauce you have to be careful not to burn the sauce. Monitoring the temperature and stirring constantly help prevent this.
