Instructions

Things You'll Need:

  • 1/4 lb of Mexican chorizo
  • sausage, removed from casing
  • 1/2 onion minced
  • 6 to 8 flour burrito size tortillas
  • 4 garlic cloves minced
  • 2 jalapenos minced, seeds and all. Okay not if don't want Latin love in your tongue.
  • 1/2 green bell pepper
  • 1/2 tomato
  • 1/3 cup cilantro
  • 1 tablespoon cracked black pepper
  • 2 large potatoes cubed or use French fries or tater tots.
  • into half inch squares.
  • 8 eggs
  • 1 cup of shredded sharp cheddar cheese
  • sea salt to taste
  • 1/2 cup of sour cream
  • 3 table spoons of olive oil or your judgement.
  1. Step 1

    Get the chorizo and put it in your frying pan and cook it till the oil renders out of it, don't let it burn but make sure it is cooked and begins to look more like hamburger meat,

  2. Step 2

    add the minced onion the minced garlic and the jalapeno stir for a minute or two, till you smell the flavors of the onion and garlic, If there is not enough oil out of the chorizo add a tablespoon, just make sure it does not burn.

  3. Step 3

    add the minced potatoes and make sure the potatoes get covered with the chorizo mixture and cover on low heat for about five minutes or in till the potatoes are close to done. This will not take long as, long as you minced the potatoes in half inch squares or smaller.

  4. Step 4

    whisk the eggs and have them ready, now Heat another pan with a few table spoons of olive oil till the oil gets hot and pour the whisked eggs into the pan and scramble till done and salt to taste.

  5. Step 5

    Add the scrambled eggs to the chorizo and potatoes and mix well

  6. Step 6

    get the tortillas and warm them up in a pan till nice and pliable

  7. Step 7

    have the minced tomato and cilantro mixed together, you will use a tablespoon of this to add to the burrito

  8. Step 8

    Get the mix of the chorizo and have the warm tortilla ready and fill the tortilla with as much or as little as you like to make the burrito, add the sharp cheddar cheese as much or as little, to your liking and add a dollop of sour cream and some of the minced tomato to the burrito, Now roll them up and enjoy.

Tips & Warnings
  • don't over fill or you will not be able to roll them up very well.
  • You might want to add raw onion to this for those who like onion and that is for the crunch affect. You can omit anything you don't like.
  • You can even use French fries or tater tots in stead of the potatoes, but if you do, do not add them to the chorizo, save them and add them cooked and crispy to your burrito mix.
  • as with any foods make sure no one is allergic to any of the ingredients. Hope you enjoy.
