In Thailand, a bowl of hot and sour Tom Yum Soup is often the cure for chilly nights or clearing up the sinus. Its a delicious soup on its own as well as a compliment to the main course.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 cup peeled shrimp
  • 1 lemon grass
  • 1 tsp of tamarind powder or 2-3 cubes of tamarind
  • 2 tbs of chili soya bean oil
  • 2-4 kaffir leaves
  • cilantro
  • lime
  • fish sauce
  • straw mushroom
  • 4 cups of water
  1. Step 1

Boil 4 cups of water in a pot. Smash the lemon grass so that its juices can release before adding it to the pot. Allow it to simmer in medium heat for about five minutes. Add the kaffir leaves, the chili soya bean oil as well as the tamarind.

  2. Step 2

To prepare the shrimp: peel, rinse, then clean out the veins. Set Aside.

  3. Step 3

Add the sliced or whole straw mushrooms. Taste the broth. It should be sour and a little spicy and a little sweet but everything is according to your own taste buds. So flavor liberally.

  4. Step 4

Add the shrimp then turn off the burner because you don't want to over cook the shrimp. Chewy shrimp is not yummy shrimp. In your individual serving bowls you can squeeze a teaspoon of lime juice. Serve nice and hot.

  5. Step 5

    Enjoy!

Tips & Warnings
  • If you'd like, you may enjoy your soup with some steamed white rice. To prepare the rice simply add equal parts rice to equal parts water to a pot and allow to cook covered for 10 minutes or so.
  • Be careful to not allow the uncooked shrimp to sit out in room temperature for too long. Keep refrigerated until it is needed.
