  • 1 cup cider vinegar
  • 1/2 cup sugar
  • 1 cup crumbled blue cheese
  • 1 small onion, chopped
  • 1 tablespoon Dijon mustard
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1 cup vegetable oil

Instructions

      Add the cider vinegar, sugar, a half-cup of blue cheese, onion, mustard, garlic and salt. Cover and process until smooth.

      Slowly add the oil in a steady stream until the consistency of a dressing is reached. Remove from the food processor and pour into a bowl.

      Stir in the remaining half-cup of crumbled blue cheese. Keep in the refrigerator until use and refrigerate any leftover dressing.
