Green Chili

Green chili is a simple meal, yet distinctly satisfying. Follow this recipe exactly or adjust it as desired. Green chili can be prepared in less than an hour and then simmered on the stove for a few more hours to allow the flavors to blend. Serve green chili with tortilla chips and a salad for a light, yet satisfying, meal. This recipe will serve between 8 and 10.

Things You'll Need

  • 2 lbs. beef stew meat 2 cloves fresh garlic (minced) Pepper (amount to taste) 4 to 5 tbsp. flour 1 can diced tomatoes (14-oz. can) 1 can beef broth (14-oz. can) 1 cup water 20 green chilies (diced finely) 2 cups chopped onion (chopped finely) Salt and pepper Cutting board Chef's knife Stock pot Stove top Garlic press

Instructions

    • 1

      Mince the garlic cloves with the garlic press. Dice the chilies and chop the onions.

      Place the stew meat in the stock pot. Add the garlic and the pepper. Begin to cook the beef over medium heat. Sprinkle the flour onto the meat when it is approximately half browned, and continue browning.

      Add the tomatoes, beef broth, water, green chilies and chopped onion to the stock pot. Increase the burner heat to medium high until the mixture boils and then reduce the heat to low.

      Cook the chili on low for 1 hour, stirring often.

      Taste the chili. Adjust any seasonings, if necessary. Add more salt, pepper, garlic or chilies if desired.

      Simmer the chili for 1 more hour and remove from the heat.
