How to Preserve Yellow Squash
Yellow squash is a favorite vegetable of many people and is commonly referred to as summer squash. Also known as a constricted necked squash because the end where it attaches to the stem of the plant it grows on is thinner than the opposite end, yellow squash is a member of the gourd family. It can be planted anytime after the threat of frost has passed in the spring. Yellow squash is a versatile food; for example, it is an ingredient in recipes for pies, cakes, salads, and soups and can be prepared using such methods as frying, boiling, grilling, and steaming. How to Preserve Yellow Squash

Wash the fresh squash in cold water. Gently rinse the squash and get any dirt that may be on it off. Bring a large pot of water to a boil. The pot should be about two-thirds full. Prepare a bowl of ice water that is large enough to handle an entire cut-up yellow squash.

Slice the two ends off the squash with a knife. Remove the last quarter to half an inch on each end of the squash. Proceed to cut the squash up into slices that are about half an inch thick.

Place the yellow squash slices in the pot of boiling water. Cover the pot and leave the slices in the boiling water for three minutes before removing them with a large slotted spoon.

Transfer the boiled slices from the pot into the ice water. Leave them in the ice water for five minutes and then drain them into a colander. Allow as much water as possible to drain out of the yellow squash slices.

Put the yellow squash slices into heavy duty Ziploc freezer bags. Insert a straw into the bag and seal it as far as you can, leaving room for only the width of the straw. Use the straw to suck out as much air as you can, then push down on the straw to flatten it, pull it out, and seal the bag up. Place the bag in the freezer where the yellow squash will freeze for use at a later time.

Tips & Warnings
The above process can be repeated using the same boiling water for up to five times before it should be changed.
