This recipe allows you to make twelve delicious doughnuts faster than you can drive to the nearest doughnut store!

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 cup milk
  • 2 cups of all purpose flour
  • 1/2 cup of warm mashed potato
  • 1/2 teaspoon of salt
  • 1/4 cup of sugar
  • 2 Tablespoons of oil
  • 5 teaspoons yeast
  • pinch of sugar
  • half cup of milk
  • teaspoon of butter
  • 1 cup of powdered sugar
  • 1/4 teaspoon of lemon and 1/4 teaspoon of vanilla extract or 2 tablespoons cocoa powder
  • flour for kneading surface
  • baking sheet to sit on to allow to rise
  • oil
  • heavy pan
  • cutters
  1. Step 1

Put a medium potato into the microwave, cook until soft when squeezed. You need 1/2 cup of warm mashed potato. When it is cooked, scoop out the potato and mash with a fork. Measure 1/2 cup.

  2. Step 2

Heat the milk until it is just warm. Add a pinch of sugar, I used Splenda, and the five teaspoons of yeast. It is important that the milk is warm and not hot, as hot milk will kill the yeast. Stir it well and allow to stand for five minutes.

  3. Step 3

    In a bowl combine:
2 cups of all purpose flour
1/2 cup of warm mashed potatoes (see the bottom of the page)
    1/2 teaspoon of salt
    1/4 cup of sugar

  4. Step 4

    Then add:
    The milk mixture
    2 Tablespoons of oil

Mix well for approximately three minutes. It has to be well combined.

  5. Step 5

Sprinkle some flour on your surface and turn out the mixture. Knead for about one to two minutes. It really doesn't need a lot of kneading, unlike bread.

  6. Step 6

Either roll, or spread with your hands, to a thickness of half an inch. Add a little more flour if needed.

  7. Step 7

Cut out the doughnuts using either a doughnut cutter or a glass for the outside cut and a smaller circle object for the centre hole. I used the measuring scoop for a fibre drink.

  8. Step 8

As you cut out each doughnut place on a floured pan. Let them stand to rise for about ten minutes as you heat the oil. I put the pan into a warmed oven to encourage the rising.

  9. Step 9

It takes about five minutes to heat the oil. Pour about half an inch of oil into a heavy pan. If it starts to smoke it is too hot. I used one of the centre pieces to test.

  10. Step 10

Cook the doughnuts on each side until golden. Allow them to drain on some kitchen paper. I cooked the centres as well as the doughnuts.

  11. Step 11

Glaze the doughnuts in either a vanilla or chocolate dip.

In a mug, microwave half of cup of milk with a teaspoon of butter.

    Vanilla Glaze

    In a bowl mix:
    1 cup of powdered sugar
2 Tablespoons of the milk mixture
    1/4 teaspoon of lemon
    1/4 teaspoon of vanilla extract
If you a really thin glaze, just add a little more of the milk mixture.

    Chocolate Glaze
    In a bowl mix:
    1 cup of powdered sugar
    2 Tablespoons of Hershey Cocoa
3 Tablespoons of the milk mixture from above.

Tips & Warnings
  • These last really well, the next day they are still soft and fresh.
  • They won't last until the next day.
