How to Make the Best Low Carb Dish Ever

One of the most difficult things for me about being on a low carb diet was giving up eating spaghetti. Fortunately, however, I've found a way around the spaghetti prohibition, even for those who are on ultra low carb diets! Read on for how to fix quick, yummy "spaghetti"!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • jar of low sugar spaghetti sauce (less than 4 grams per serving)
  • two cups sliced mushrooms
  • Tablespoon olive oil
  • 1 pound ground sirloin
  • four large
  • Parmesan cheese (optional)
  • large frying pan
  1. Step 1

    Saute the mushrooms in the olive oil. Set aside.

  2. Step 2

    Cook the ground sirloin (perfect for low carb dishes!) in the same pan. Once it is finished cooking, take some paper towels and soak up the fat. There won't be very much. This will save some calories, however!

  3. Step 3

    Now add the jar of spaghetti sauce and the mushrooms. Simmer until hot.

  4. Step 4

    While the sauce is simmering, grate the zucchini on the large side of the grater. Put the grated zucchini in an appropriate sized glass bowl, cover with plastic wrap, and microwave for eight to ten minutes. Set aside.

  5. Step 5

    Dish up the zucchini just like it is spaghetti. Only think about it being spaghetti with virtually no calories or carbs, and a heck of a lot more vitamins and fiber. Cover the zucchini with the spaghetti sauce and top with Parmesan cheese if desired.

  6. Step 6

    This low carb dish serves four and has approximately 300 delicious calories per serving.

Tips & Warnings
  • You can always jazz up your jarred spaghetti sauce by adding a pinch or two of ground red pepper, some chopped fresh basil, additional garlic, or anything else that comes to mind.
  • If you are cooking for one person, make the sauce all at once, but grate the zucchini as needed. You'll need to microwave one grated zucchini about four minutes.
  • This recipe reheats well, and is great for work lunches!
  • If your family wants the carbohydrate-rich spaghetti, simply make a side of zucchini for yourself. This recipe is easy to integrate into regular family eating.
  • Be careful not to overcook the zucchini. Since microwaves vary, check the zucchini after five minutes to see how it is doing.
