How to make zucchini snack cakes

Instructions

Things You'll Need:

  • 1/2 cup butter, softened
  • 1 3/4 cups sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all purpose flour
  • 2 teaspoon baking cocoa
  • 1 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 cup buttermilk
  • 2 cups shredded peeled zucchini
  • 2 cups semisweet chocolate chips
  1. Step 1

    This is a delicious dessert recipe. The only thing that can make this taste any better is a scoop of ice cream. There is no frosting needed for this cake. You will need a large mixing bowl to start. You will also need a 13 inch by 9 inch by 2 inch baking pan. Preheat your oven to 350 degrees.

  2. Step 2

    In your large mixing bowl you will add your butter and sugar. Blend these two ingredients together. Then beat in the oil, eggs, and vanilla. In another bowl you will need to combine your dry ingredients. Now you will slowly add the dry ingredients to your cream mixture. While you are doing this you will alternate adding the dry ingredients and the buttermilk.

  3. Step 3

    You will now stir in the shredded zucchini. Pour this mixture into a greased baking pan. Sprinkle with the chocolate chips and bake at 350 degrees for 45 to 50 minutes. Check with a toothpick when the toothpick comes out clean when inserted in the center the cake is done. Cool on a wire rack until completely cooled.
