How to Debone a Chicken Thigh

Deboning a chicken thigh is a useful cooking technique to learn and master. Bone-in chicken is typically less expensive than boneless chicken. When you are adept at deboning a chicken thigh, you can buy the bone-in chicken and debone it yourself to save money. Cooking boneless chicken takes less cooking time as well.

Instructions

Things You'll Need:

  • 8-inch utility knife Kitchen scissors Chicken thigh Plastic cutting board
  1. Step 1

    Place a chicken thigh onto the cutting board so that the bony side is facing up and the smooth, meaty side is facing down.

  2. Step 2

    Insert the tip of the knife into the thigh at the bone until you feel the resistance of the bone against the knife. Make a slice with the knife along the entire length of the bone. Remove the knife.

  3. Step 3

    Stick your fingers into the cut made in step 2 and tug on the bone to loosen it from the thigh. Pull the bone up and away from the thigh as much as possible and then use the kitchen scissors to cut away the chicken membranes from under the bone.

  4. Step 4

    Continue snipping away the cartilage and membranes as necessary to completely separate the bone from the chicken thigh. Remove the bone and discard it.
