If you love fresh strawberries, bake them in a pie. Not only does this pie taste good, but it also looks good. While this recipe covers making the pie dough, you don't need to make one from scratch if you don't have the time. Use a prepared pie dough from the grocer's freezer to make this pie quickly. Things You'll Need

  • 1 1/3 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup shortening
  • 4 teaspoons, plus 1 tablespoon of milk, separated
  • 4 tablespoons water, plus 1 3/4 cups water, separated
  • 8-ounce package cream cheese
  • 1/2 cup, plus 2 tablespoons sugar, separated
  • 1 to 1/2 quarts of fresh strawberries
  • 1 tablespoon cornstarch
  • 3-ounce package strawberry gelatin
  • Large mixing bowl
  • Small mixing bowl
  • 9-inch pie pan
  • Foil
  • Wooden spoon
  • Small saucepan

Instructions

  1. Pie Crust

    • 1

      Combine the flour and salt in a large mixing bowl. Add the shortening in small chunks until the mixture resembles crumbs.

      Combine 4 teaspoons of milk and water in a small mixing bowl. Add this mixture to the crumb mixture. Toss the dough with a fork in the bowl until the dough forms a ball.

      Refrigerate the dough for 30 minutes.

      Roll out the dough until it fits into a 9-inch pie pan.

      Transfer the dough to a greased pie pan. Trim the dough until it extends a half-inch beyond the pan side. Pinch the crust edge between your fingers all the way around. Cover the crust with foil.

      Bake the crust at 450 degrees F for 8 minutes. Remove the foil and bake 7 minutes more. Remove the crust from the oven and let it cool on a wire rack.

    Pie Filling

      Beat the softened cream cheese, 2 tablespoons sugar and 1 tablespoon of milk until smooth in a small mixing bowl. Spread the mixture over the bottom of the crust.

      Slice the strawberries and arrange them over the top.

      Combine the 1/2 cup of sugar, cornstarch, salt and 1 3/4 cups of water in a saucepan. Bring the mixture to a boil. Cook for 2 minutes until it is thickened.

      Remove the mixture from the heat and stir in the gelatin with a wooden spoon. Stir until the gelatin is completely dissolved. Chill until partially set.

      Pour the mixture over the strawberries. Refrigerate the pie until it is set, which means it is relatively solid when wiggled.

Tips & Warnings

  • Refrigerate all left overs immediately.
