How to Cook Chicken Afritada

If you are looking for a way to use leftovers, try a different take on the traditional chicken and rice. Chicken Afritada is a Filipino dish that is often served with pasta or rice. This quick dish can be ready in under an hour, and most of the ingredients will likely already be in your pantry. If you need help locating the fish sauce, check the tips section for what to do.

Things You'll Need

  • 2 lb. chicken, deboned, skinless, and cubed 5 small potatoes, peeled and cubed 1 onion, diced 1 clove garlic, minced 1 tsp. cumin seed 2 bell peppers, seeds removed, cubed 1/2 c. carrots, diced 1/2 c. green peas 2 c. chicken broth 1 c. tomato sauce 2 Tbsp. fish sauce (optional) (See tip) 3 Tbsp. oil Skillet or wok Rice or pasta for serving (optional)
  • Heat skillet or wok over medium high heat. Add the oil and let the it heat until it is sizzling before adding the onion, cumin seed and garlic.

  • Cook the onion, cumin seed, and garlic until they start to brown and turn fragrant. Add the chicken and continue to cook until the chicken is browned on all sides.

  • Pour the broth and the tomato sauce into the skillet with the browned chicken and bring the entire mixture to a full boil.

  • Lower the heat to medium low and continue to cook for about 20 - 30 minutes or until the chicken has been cooked all the way through. Test to see if the chicken is done by removing a cube and slicing it open. The chicken should be entirely opaque all the way through without any pink.

  • Add the remaining ingredients to the skillet and simmer for another 10 minutes until all of the vegetables are tender. When the potatoes are tender, the rest of the vegetables will be finished since these will take the longest time to cook. A fork or knife should slide easily into the potato when it is finished cooking.

  • Serve hot over rice or pasta if desired.

Tips & Warnings

  • Fish sauce can be found at Asian grocery stores or in the ethnic section of many supermarkets. Feel free to omit it if you cannot find it.
