Step 1
Cut a square of cheesecloth twice the size of the bay leave. Lay the bay leaf and any other herbs to be used in the recipe on top of the cloth.

Fold the cheesecloth around the bay leaf and tie it closed securely with string.

Place the leaf into the dish for the duration of its cooking time. Remove before serving.

Crush one bay leaf with the back of a spoon inside a small bowl. Powdered bay leaf can be substituted.

Mix any other spices called for in the recipe with the bay leaf in the bowl.

Sprinkle the crushed bay leaf and spices onto the meat. Alternately, you can rub it onto the meat with your fingertips.

Sprinkle any excess crushed bay leaf onto the meat before serving as garnishment, if desired.
