Whether you have just gutted a pumpkin for Halloween carving or to make a fresh pumpkin pie, don't throw the seeds away with the pulp. Roasted pumpkin seeds, also known as pepitas, are an autumn treat. You can prepare pumpkin seeds as a healthy snack to keep in your candy dishes instead of sugary fare. They only take a few minutes of preparation before they are ready to eat.

Instructions

Things You'll Need:

  • Pumpkin seeds Colander Paper towels Cookie sheet Salt
  1. Step 1

    Separate the pumpkin seeds from the pulp and discard the pulp. Place the seeds into a colander in the sink.

  2. Step 2

    Rinse the seeds under running warm water to remove any pulp that is still present. Allow the excess water to drain from the colander and then blot the pumpkin seeds dry with a paper towel.

  3. Step 3

    Place the seeds in an even layer on a cookie sheet. Sprinkle them with salt for flavor.

  4. Step 4

    Bake in a preheated oven at 250 degrees Fahrenheit for 15 to 20 minutes. Stir once or twice halfway through the baking time so they can roast evenly. The seeds will turn a golden brown when done.

Tips & Warnings
  • Use your favorite seasoning mixture on the pumpkin seeds instead of plain salt. Sweet pepitas can be made with a sugar and cinnamon seasoning blend.
  • Spray the baking sheet with cooking oil if you will be using sugar in your seasoning.
