Use it on asparagus. Hollandaise sauce is a perfect companion for asparagus. Just steam the asparagus, drain it, and top it with hollandaise sauce.

Use it with fish. Hollandaise sauce is especially delicious on salmon, but it works well with any fish. Hollandaise sauce almost makes a good shrimp dip.

Use it in casseroles. Mix cooked pasta and steamed vegetables together in a casserole dish and then pour hollandaise sauce over the top. Toss the mixture to coat the vegetables and pasta with sauce. Then bake in the oven until hot and bubbly.
