How to Make Apple Walnut Chicken Salad

I have made this apple walnut chicken salad for everything from kids birthday party's to baby showers. Every one loves the flavor of the toasted walnut and the crisp red apples with cinnamon and chicken. You can serve this on any kind of bread or I think it is best in a crescent roll. You can make the chicken salad one day ahead of time and do not use it after three days.

Instructions

Things You'll Need:

  • 1 lb baked chicken breast
  • 1/2 cup walnuts
  • 2 red apples
  • 1 stalk celery
  • 3 green onions
  • 1/2 cup mayo
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons sugar
  • 1 tablespoon cinnamon
  • 1/4 teaspoon cayenne
  1. Step 1

    You will start the chicken salad by lightly coating the walnuts in canola oil and toasting them for 3-5 minutes at 350 degrees. Keep a watchful eye because they will burn quickly.

  2. Step 2

    Mix the cinnamon, sugar and cayenne together in a bowl. Then coat the nuts while they are still hot. Do not get rid of the extra sugar mix you will use some of this in the chicken salad.

  3. Step 3

    Dice the chicken, celery and green onion. Peel and core the red apples. Dice the red apples as well.

  4. Step 4

    Mix the apples, walnuts, green onion, celery, chicken, mayo, apple cider vinegar, and 1 table spoon of the leftover sugar mix from the nuts. Refrigerate the chicken salad until you are ready to serve. You can serve the chicken salad as a sandwich or with lettuce.
