How to Make Squash and Zucchini and Tomato Pickles

  1. Step 1

    Squash Pickles: 8 cups of yellow squash, 2 cups of onions, sliced, 1 TBS salt, 1 1/2 cups diced green bell peppers, 1 cup cider vinegar, 1/2 tsp celery seed, 1/2 tsp mustard seed, 1 1/3 cups granulated sugar

    Combine squash and onions in a bowl and sprinkle with the 1 TBS of salt. Let set one hour.

    Combine everything else in a separate pot and bring to a boil.

    Add the squash and onions and bring it to a boil.

    Pack the pickles in hot, sterilized jars and pour some of the leftover vinegar mixture into the jars to cover the squash. Put the lids on and process in simmering hot water for 10 minutes.

  2. Step 2

    Zucchini Pickles: 2-4 pounds small zucchini, 2 onions, 2 green and two banana peppers, 2 cups vinegar, 1 tsp celery seed, 2 tsp mustard seed, 2 tsp turmeric, 1/2 cup salt

    Place the zucchini, onions, peppers, salt in pan of cold water. Let this stand for 3 hours and then drain the water.

    Heat: vinegar, sugar, mustard seed, turmeric and celery seed.

    Add zucchini and onions. Boil for 5 minutes. Pack in jars and seal.

  3. Step 3

    Green tomato Pickles: 1 pint of sugar, 1 gallon sliced GREEN tomatoes, 6 sliced onions, 8 banana peppers, 3 jalapeno peppers, 1 quart vinegar, 1/2 cup salt

    Saok tomatoes in i gallon salt water for 2 - 3 hours. (That's the 1/2 cup of salt listed in the ingredients. Do not add additional salt.)

    Drain. Mix everything together and cook until tender. Stir this pretty often.

    Pour in jars, seal and process in hot water for 5 minutes.
