If your family is like mine, we are always in a rush in the mornings. Between school, sports, outings, doctors visits - mornings can be hectic times. And just our luck, the most important meal of the day, breakfast, also occurs in the morning.

This is a great recipe for a quick, healthy breakfast that kids and adults alike will enjoy at home or on the go!

Difficulty: Easy
Instructions

Things You'll Need:

  • Flour or Whole Wheat Tortillas
  • Eggs or Egg-beaters
  • Sliced Turkey or Ham lunch meat
  • Shredded Cheese
  • Salt & Pepper
  1. Step 1
     

    Take one piece of lunch meat per person, and fry over medium heat in a pan until browned on both sides. You can break it apart if you like.

  2. Step 2
     

    Use egg-beaters or stir up a couple eggs (1-2 per person). Poor the eggs into the pan ON TOP of the lunch meat. Cook and stir until eggs are done.

  3. Step 3
     

    Lay a tortilla on a paper towel. If you children like ketchup with their eggs, squirt a little ketchup on the tortilla. You can also add a little shredded cheese.

  4. Step 4
     

    Place the egg/meat mixture into the tortilla. Roll it up. Then wrap the paper towel around it like a diaper. Now you're ready to go!
