How to Make Crock-Pot Stuffed Peppers

Crock-pots are helpful anytime of the year, whether because you're too busy to cook at night, the weather's too hot (or cold), or you just want something simple. You can use a Crock-Pot to make various meals, including stuffed peppers. Does this Spark an idea?

Things You'll Need

  • 6 large bell peppers
  • 1 lb. ground beef
  • 10 oz. cooked rice
  • 1 cup bread crumbs
  • 2 tbsp. chopped onion
  • 1 (26-28 oz.) can spaghetti or tomato sauce, 1/2 reserved
  • Salt and pepper to taste
  • 1 (15 oz.) can of corn

Instructions

      Spray inside the Crock-Pot with nonstick cooking spray.

      Cut the tops off of your peppers and clean out their center area. Rinse any leftover seeds out of the pepper and set peppers inside the cooker.

      Mix all ingredients by hand (leaving about half the spaghetti sauce out for use later) in a large bowl

      Push a handful of mixture into one of the peppers. Continue until the pepper is full but not overflowing with mixture. Repeat until you have all peppers stuffed.

      Pour remaining tomato sauce over peppers.

      Turn the slow cooker on low for six to eight hours.

Tips & Warnings

  • If you would rather bake these in the oven, you will want to follow the same instructions as above, only put them in a casserole dish and cover with foil. Make sure you don't put the foil down too close and you leave a little 'tent' above the stuffed peppers. Bake 45 minutes in a 350' oven covered and then take the foil off and bake another 15 minutes uncovered.
