There is nothing like eating a steaming hot bowl of cream of crab soup to warm you up on cold days. When you throw some pepper jack cheese to melt in the soup, it becomes even better. There is very little work involved in making this soup, and its hearty taste and texture will leave you wanting more. Things You'll Need

  • Grater
  • Large pan
  • 2 medium potatoes
  • 1 large onion
  • 8 oz. pepper jack cheese
  • ½ cup butter
  • 1 tsp. salt
  • 3 tsp. seafood seasoning
  • 1 tsp. black pepper
  • 3 cups milk
  • ½ cup all-purpose flour
  • 2 ½ cups crab meat

      Peel the onion and potatoes. Cut the onion in little pieces and the potatoes in small chunks. Next, grate the pepper jack cheese into a bowl and set aside until needed.

      Place the potato chunks to a pan and cover with water. Cook on high heat for 10 minutes and then drain the water. Partially cooking the potatoes before adding to the pan of onions helps the soup to get done faster.

      Melt the butter in a large pan on medium high. Next, add the onions and cook on medium heat until softened. Bell peppers can be used either in combination with or instead of the onions. Remove the pan from the burner.

      Put the drained potatoes, salt, seafood seasoning and black pepper in with the sauteed onions. Pour in the milk and stir all the items together.

      Add the flour to the pan, a little bit at a time, and use a whisk to blend it in. Heat the soup on medium heat, stirring constantly, until the milk thickens slightly. Next, add the grated pepper jack cheese to the thickened milk and heat until melted.

      Dump the crab meat into the thickened milk and cook on simmer for 15 minutes. You can use fresh crab meat or canned. If the soup is too thick, add a little milk to thin it down.

      Take the pan off the stove and ladle into bowls. Add crackers or bread and enjoy your cream of crab & pepper jack soup.

Tips & Warnings

  • Try using egg noodles or rice in your soup instead of potatoes for a delicious twist. Sprinkle a tablespoon of chopped parsley on the pan of soup as a colorful garnish.
