Fettuccine Alfredo is an American dish modeled after a similar Italian dish called fettuccine al burro e panna, or fettuccine with butter and cream. It is named after the Italian chef Alfredo di Lelio, who served the dish to American tourists at his restaurant in Rome. Alfredo can be tossed with fettuccine noodles, in addition to vegetables or meat to make a standalone meal. Does this Spark an idea?

      Fill a 6 qt. pot ¾ of the way full of water and add 1 tsp. of salt. Bring the water to a rolling boil, and then add 12 oz. of fettuccine noodles. Cook for 15 to 20 minutes (or according to directions on package), until tender.

      Strain the water from the noodles and set aside. Place 3 tbsp. of butter into a medium saucepan over medium heat. Stir in ¼ cup of flour once the butter melts and cook for one minute.

      Whisk 2½ cups of milk into the saucepan, and raise the heat to medium-high. Begin whisking once the milk has begun to boil and continue until it begins to thicken.

      Reduce the heat to low and add ¼ cup of Parmesan cheese, 1/8 tsp. of nutmeg, ½ tsp. of salt, and ¼ tsp. of black pepper. Whisk all of the ingredients together, and cook for two minutes.

      Add the fettuccine noodles to the sauce and toss until the noodles are thoroughly coated. Remove the saucepan from heat and wait one to two minutes for the dish to cool. Serve immediately and garnish with shredded Parmesan cheese, if desired.

Tips & Warnings

  • This recipe will serve four to six people and prepares 2 cups of Alfredo sauce and 12 oz. of fettuccine.Cooked chicken or shrimp and vegetables can be added to this recipe to create a more flavorful and filling meal. Stir in cooked meat and/or vegetables after adding the sauce to the pasta.Margarine can be used in place of butter.
