How to make a fruit and nut tossed salad

  • olive oil
  • sugar
  • white vinegar
  • fresh parsley
  • salt
  • hot pepper sauce
  • pecan halves
  • butter
  • fresh spinach
  • romaine lettuce
  • mandarin oranges (in a can)
  • celery
  • green onions
  • fresh strawberries
  1. Step 1

    When it is summertime we enjoy using some of the things we grow in our garden. Everyone in the house loves to eat salads so I thought why not put a spin on it. This is a simple easy recipe that takes little time to make and adds a burst of color to your dinner table. First in a small bowl you will make the dressing. You will whisk 1/4 cup of olive oil, 3 tablespoons of sugar, 2 tablespoons of white vinegar, 1 tablespoon of minced fresh parsley, 1/4 teaspoon salt, and a dash of hot pepper sauce. Whisk until it is well blended. Then you will cover it and refrigerate.

  2. Step 2

    In a skillet over medium low heat you will add your 1/3 cup of sugar. Heat without stirring for about 30 minutes or until golden brown. When you reach this point add 2 tablespoons of butter and 1 cup of pecan halves. Once the butter is melted remove from heat. Pour this mixture onto a foil lined baking sheet to cool. When the pecans are completely cooled you can break them into smaller pieces. Then in a large salad bowl you will begin to assemble the salad.

  3. Step 3

    You will combine 4 cups of torn spinach, 4 cups of torn romaine lettuce, one can of mandarin oranges that have been drained, 2 celery stalks that have been chopped into bit size pieces, 1 cup of sliced fresh strawberries, and 4 green onions finely chopped. Just before serving you will drizzle with your dressing. Toss the salad with the dressing until everything is coated. Top with your sugared pecans.
